Easy Roasted Veggies

One of my goals in starting out with parenting was that ALL of my kids would eat broccoli. I’m happy to say, they ALL love this delicious roasted broccoli and other vegetables. Here’s the quick and easy recipe!

Ingredients:

  • 2 heads of broccoli
  • 1 squash
  • 1/4 of a smal red onion
  • grape tomatoes
  • Olive Oil
  • Balsamic Vinegar
  • Montreaal Steak Seasoning or Seasonings of your choice
  • Any other vegetables you choose: We love adding brussel sprouts, asparagus, Kale, carrots, fresh green beans or basically ANY vegetables that you have on hand and want to use up!

Directions: Preheat the oven to 425 or 450 degrees if you are the daring type. Cut all of your chosen vegetables into bite sized pieces and throw them into a large bowl. Drizzle olive oil over and stir to lightly coat all of the vegetables. Now without anyone else seeing you (like a spouse or kids) add 2-3 splashes of Balsamic Vinegar (This is a secret ingredient that I think adds a nice bit of browness to the broccoli heads and makes them taste like BACON) Then add your desired seasonings. This time, I used Grill Mates Montreal Steak Seasoning and it is really delicious. You could use garlic powder, lemon pepper, or any herb seasoning. Be sure to add some salt, kosher or Sea Salt is great. Then pour that whole bowl full of veggies onto the largest cookie sheet that you have. You don’t want it to be too crowded or the veggies won’t crisp up as well. Sometimes I line the cookie sheet with foil for easier clean up. Then stick the pan of goodness into the oven and roast for 15-20 minutes, until the broccoli starts to brown just a tiny bit. Voila! Best Roasted Veggies ever that your kids will love!

And now…..the directions again…..WITH PICTURES!

You can adjust this recipe and add protein to it as well! Add on a slab of beautiful salmon, and you have a complete meal.

When Tom and I moved to Dallas for him to attend S When Tom and I moved to Dallas for him to attend Seminary, that first semester I audited "Soteriology" with Dr. Pyne and loved it so much, I decided to attend seminary as well. Tom and I graduated together in 1999 with our Master's in Biblical Studies degress. We enjoyed those years of study so much! Then we started our family, and I sometimes would wonder how I would use my degree some day (besides personally and with my family, which I don't discount at all!). Fast forward to 2013 when I wrote The Marvelous Mud House, and then 2018 when I wrote The Marvelous Maker. I don't know if my "credentials" with DTS gave me an edge in getting published, but I'm sure it didn't hurt! :) Today, I enjoy studying the Word even more on a daily basis as I seek to allow God to use my gifts and callings for the building of his kingdom. This came out in DTS magazine recently! I'm so excited to share with you all my Bible read I'm so excited to share with you all my Bible reading plan!! I first decided to read through the entire Bible in 100 Days towards the end of 2020. It seemed like a good way to spend the most ridiculously crazy year of my lifetime. I knew that God was up to something in this world, if anything, reminding us all of our own mortality, and I wanted to dig into his Word and know him more intimately as I pondered meeting him face to face. I heard a statistic on the radio that said Christians are reading their Bibles less than they were before the pandemic started!
